Pejibayes

Inspired by the food-related stories
my brother is posting on his blog, of the foods I miss most being away from Costa Rica, this little coconut relative tops this list. It's pronounced pe-he-ba-jae for those of you who no hablan Espanol. It's grows in bunches on a slender, tall palm tree found in the humid tropics. It's green to yellow-orange and has to be boiled for a couple hours to soften it. It's a starch, like a fibrous potato, but has a distinct flavor I can't attribute to anything else I've tried.

I recommend it with mayonnaise and the local pilsner.
